Walking down Main Street I can hear live music blaring out from every honky tonk bar (loud, rowdy country music venue) . This is exactly the Nashville I had imagined.

We have only spent a day here and we got questioned by a local as to 'why on earth we would bother visiting San Antonio'. I think a day trip would be quite sufficient.

Austin offers no relief from the heat but it does have plenty to offer. The food trucks, the music. The atmosphere has a vibrant and excitable feel.

Fluffy, Squidgy Pancakes with Caramelised Bananas

These squidgy puffs of absolute delight were made ever so lovingly by Steve to make up for a week full of crappy disappointment. Our food trailer project is moving along but there seems to be endless amounts of holes that allow this glorious November rain to enter through the hatches and form a flowing river across the wooden work tops.

Considering these pancakes made me feel a lot better, I can pretty much guarantee that they will at least provide a smile of satisfaction. 

Whisk together in a jug or bowl 25g melted goat's butter with 1 large,free range egg and 250ml goat's milk. Add in 150g of plain flour, 3tsp baking powder and 1/2tsp of salt and whisk again. Whack a frying pan on medium heat and add a splash of oil. Add the pancake mix in 2tbsp batches and cook on each side until golden then move them onto your (massive) plate. Slice a banana length ways and fry in a pan with a drop of butter and a sprinkle of soft brown sugar until golden.

I like to drizzle over some honey to make it extra coma inducing.

This can serve 2 but....it depends how well the week has gone..you may need it all like me!
